Indonesia's volcanic islands grow a vanilla with unusual depth — mineral-rich soil and equatorial humidity coax notes of cocoa, tobacco, and dried fruit from the orchid. We buy directly from the families who grow it, pollinating each flower by hand at dawn and curing the pods slowly over weeks until they darken and turn supple.
